MAURI’s menu takes inspiration from the Pugliese tradition, offering a contemporary Italian dining experience with a touch of tradition where ingredients are handled with care to showcase their purest flavours. For this purpose, MAURI tries to use as much as possible homemade items and selecting the highest quality of local products in collaboration with Balinese farmers.
Ushers By Design, led by Caroline Usher, designed the minimalist interiors and architecture of MAURI’s intimate two-level space, weaving throughout elements inspired by the iconic coastal town of Puglia, Italy. There is an open atrium from floor to ceiling, surrounding a central grand staircase connecting the levels. Guests have full view of the open kitchen, or they can choose to have a private tasting with Maurizio at the Chef’s counter.
The Pugliese influence is apparent instantly, before guests step foot in the restaurant. The front facade of the building is an homage to the traditional architecture of stucco houses throughout Ostuni.
High above the atrium dining area, sits a giant skylight – replica of the feature in the famed Castel del Monte castle. The white stucco is accented by nods to coastal living and touches of colours with a ceramic cactus leaf art installation and pendant lamps made of dried chilis.
